Bohanan's delivers an exceptional steakhouse experience with flawless execution on their 8oz filet mignon. The USDA Prime aged center cuts of midwestern corn-fed beef grilled over mesquite arrived with perfect medium-rare doneness, showcasing excellent marbling and robust beef flavor. The steak had a beautiful crust and excellent char from the mesquite wood, creating that distinctive smokiness that sets Bohanan's apart from other high-end steakhouses. My only critique of the steak was due to it being wood-fire grilled - while the mesquite imparts wonderful flavor, it doesn't quite lock in those juices the way a high-temp broiler does at other top-tier steakhouses. There's a trade-off here: you gain that Texas-style wood-smoke character but sacrifice a bit of that buttery, juice-sealed interior you might find at broiler-based competitors. The seasoning was restrained and confident - just salt, pepper, and that hint of char from the mesquite. Bohanan's clearly understands that when you're working with quality USDA Prime beef like this, you don't need to overcomplicate things. Let the beef speak for itself.

The potatoes au gratin were decadent without being heavy. Thinly sliced potatoes layered with what tasted like a blend of gruyère and cream, baked until the top achieved that golden-brown crust while the inside remained creamy and luscious. This is comfort food executed at a high level - rich enough to feel indulgent, but balanced enough that you can actually finish the portion alongside your steak.
